What You’ll Need

  • Soft hamburger rolls, buttered and toasted
  • Condiments and toppings as desired, such as mayonnaise, mustard, shredded lettuce, onions, tomatoes, and pickles
  • Serving size for 1 burger = 4 ounces (110g) freshly ground beef chuck, divided into two 2-ounce (55g) balls
  • Kosher salt and freshly ground black pepper
  • Good melting cheese, such as American or cheddar

Instructions

  1. Prepare burger bun by laying toppings on bottom half of bun. Have it nearby and ready for when your burger is cooked.
  2. Preheat a large stainless steel sauté pan or skillet over high heat for 2 minutes. Place balls of beef in pan and smash down with a stiff metal spatula, using a second spatula to add pressure. Smashed patties should be slightly wider than burger bun.
  3. Season generously with salt and pepper and allow to cook until patties are well browned and tops are beginning to turn pale pink/gray in spots, about 45 seconds. Using a bench scraper or the back side of a stiff metal spatula, carefully scrape patties from pan, making sure to get all of the browned bits.
  4. Flip patties and immediately place a slice of cheese over 1 patty, then stack the second directly on top. Immediately remove from pan and transfer to waiting burger bun. Enjoy!

What You’ll Need

  • White cheese
  • Pepperoni
  • Blueberries

Substitutions and Variations

Red Stripes: you could use hard salami, ham, red pepper or even grape tomatoes

White Stripes: you could use cauliflower, white cheese such as mozzarella, muenster or even white cheddar cheese.

Blue Stripes: this is a little trickier. Besides blueberries, you could use a blueberry flavored yogurt with the white stars on top. Or crushed blue tortilla chips would be great also.

Instructions

  1. Place the blueberries in a bowl and then place the bowl in the corner of a large platter or cutting board.
  2. Slice the cheese into squares.
  3. Create red and white stripes using the pepperoni and cheese (or any red & white variation of food you choose).

What You’ll Need

  • 1 tablespoon fresh lemon juice
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons extra-virgin olive oil
  • ⅛ teaspoon kosher salt
  • ⅛ teaspoon freshly ground black pepper
  • 4 cups spinach and arugula salad mix
  • 1 cup fresh blueberries (about 1/2 pint)
  • ⅓ cup chopped toasted pecans
  • ⅓ cup crumbled feta cheese

Instructions

  1. Toast the pecans in a 400°F oven until slightly browned and fragrant, about 5 to 7 minutes.
  2. In a large bowl, whisk together lemon juice, balsamic, olive oil, salt and pepper. Add spinach and arugula mix, blueberries, pecans and feta cheese, tossing gently to combine.

What You’ll Need

  • 2 Mangoes cubed about 1 cup
  • 1 cup of blueberries
  • 1/4 cup chopped red onion
  • 1 jalapeño minced
  • 1/4 cup cilantro chopped
  • 2 limes juiced
  • 1 avocado cubed
  • Sea salt to taste about 1/4 or more to your liking

Optional add ins-

  • Cucumber
  • 1/2 tsp chili lime seasoning
  • Red bell pepper

Instructions

  • Just wash & chop all of your ingredients then put in a bowl expect for the avocado.
  • When everything is combined gently fold in the avocado then adjust for seasonings.
  • Let sit in the fridge in a container for at least an hour before serving, makes the flavors so much better!
  • This salsa is great with corn chips but you can use any chips that’s good for scooping.
  • Also, you can make a salad out of it or pair it with grilled fish or chicken.

What You’ll Need

  • 3 cups watermelon, cubed
  • 1 cup strawberries, chopped
  • 1 cup blueberries
  • 2 Tbsp honey
  • Juice from 1 lime
  • 1/2 cup fresh mint, thinly sliced
  • 3-4 Bosc pears

Instructions

  1. Combine fruit in a large bowl.
  2. Stir together honey, lime juice, and mint in a separate bowl, then add to the fruit mixture.
  3. Gently mix to distribute.
  4. When ready to serve, use a small star shaped cookie cutter (optional) to cut stars out of slices of pear and use to garnish salad.

What You’ll Need

  • 2 refrigerated pie crusts (or make your own)
  • 1/2 cup blueberry jam (or whatever jam or topping you want inside your pop tarts)
  • 1 egg yolk
  • 1 teaspoon milk (or water)
  • glaze (powdered sugar + milk)
  • Sprinkles (for topping)

Great other middle ideas are strawberry jam, or nutella

Instructions

  1. Preheat oven to 350.
  2. Cut pie dough into 6 evenly sized rectangles. Repeat with the second pie crust.
  3. Lay parchment paper out onto a baking sheet and carefully place 6 of the rectangles 2” inches apart.
  4. With a fork gently poke 3-4 sets of small holes into rectangle pieces.
  5. Spread 1 tablespoon of blueberry jam onto each rectangle.
  6. Place a second rectangle o #each Raspberry filled rectangle.
  7. Using a fork lightly press the edges of the rectangles together to make pretty crimped edges.
  8. Using that same fork poke 3-4 sets of holes on the top rectangle pieces.
  9. In a small bowl whisk the yolk of one egg and milk together. Lightly brush each pop tart with mixture.
  10. Place in the oven and bake for 15 minutes or until golden brown.
  11. Remove from oven and immediately drizzle icing and top with sprinkles.
  12. Let cool and serve!
